LOVE LETTERS (kueh kapit) in Singapore are thin, crispy coconut-flavored wafer biscuits, a quintessential Chinese New Year snack. Often cooked over charcoal, they are folded or rolled to signify hidden, heartfelt messages of affection. Originally inspired by Dutch kniepertie (introduced by Indonesian emigrants/Peranakans), they were historically used to secretly relay messages of love, with consumption symbolizing taking the message to heart.
Made with coconut milk, eggs, rice flour, and sugar, they are wafer-thin and delicately crispy.
